Ingredients
Round wooden toothpicks, with or without the frillies
One pint grape tomatoes
2 cups fresh picked basil leaves
One pound mozzarella cheese
extra-virgin Olive Oil
Salt & Pepper to taste
Cooking Instructions
On each toothpick, place one tomato, two folded basil leaves, and one 1/2" cube of cheese. I like to do them one ingredient at a time----all the tomatoes, then all the basil, then all the cheese---but whatever works for you. Place on a patter and drizzle VERY lightly with the oil, and then VERY lightly sprinkle with salt and pepper.
These are fantastic with white wine and a thinly sliced Italian baguette as an appetizer to a summer outdoor meal. They go really fast!!
