Ingredients
1-1/2lb. boneless chicken breasts
2c. spicy bbq sauce
1tsp. canola oil
1c. sliced red onion
1-15oz can kidney beans
1 pkg. pita bread, pieces cut in half, or 2 pkgs mini pitas
1c. shredded lettuce
Cooking Instructions
Remove skin from breasts and marinate in 1c. bbq sauce for 20 min. Grill until done, let cool, shred, and set aside. Heat oil in a sauce pan, when hot, add onion. Let it get dark brown (caramelize). Add kidney beans and remaining cup of sauce, simmer for 10 minutes. Toss in shredded chicken. Serve in warmed pita bread topped with shredded lettuce.
